CAPOCOLLO MARTINESE

CERTIFIED ITALIAN EXCELLENCE


Capocollo di Martina Franca is our pride and joy in the artisanal production of cold cuts and fresh meat. Made from the prized part of the pig's neck, this Italian sausage combines tradition with quality, offering a unique culinary experience.


Our production process carefully follows the family recipe: the pork is skilfully seasoned with a mixture of salt, black pepper, garlic and red chilli pepper. Afterwards, the capocollo rests in cool, well-ventilated rooms, respecting different curing times to satisfy the most demanding palates.


The end result is a masterpiece of flavour, with a marbling of fat that gives the capocollo an irresistible texture. Appreciated as an hors d'oeuvre or as the protagonist in a rich plate of cured meats and cheeses, it embodies the excellence of artisan production of cured meats and fresh meats, carrying on the tradition with passion and dedication.

OUR HISTORY


We entered this fascinating world back in 1989. The beginning was almost a game, born out of the desire of the current owner's father to get him interested in the art of meat processing.


He took his first steps alongside his mentor, or, as he is affectionately known in our parts, 'u mestr'. Mornings began early, with waking up at dawn to tend to the animals in the fields. At the end of these labours, fate took him to a butcher's shop, the one owned by his father.


Since then, the journey into the artisanal production of cold cuts and the sale of fresh meat has become our passion and our daily commitment. With skill and dedication, we carry on this tradition that has deep roots in the heart of our community.
